A fresh, contemporary, and seasonal menu from my cookbook, A Taste of the Maritimes: Local, Seasonal Recipes the Whole Year Round (Nimbus, 2011).
Preparation of a full meal with love-inducing ingredients in every dish, including anecdotes about their passionate histories and Maritime love stories.
A Tour of the Lunenburg Farmers’ Market
A field trip to meet local farmers and tour the outdoor summer market, topped off with a picnic of fresh-brewed Laughing Whale coffee and gourmet treats from market sellers.
Learn how to take full advantage of some of the best seafood Nova Scotia has to offer in three different preparations, including a mixed seafood salad, scallops pan-fried with a miso garlic confit, and scallops baked in a fresh herb butter cream sauce.
Farm to Table Team Building
This class pairs team-building exercises with fresh, local cuisine. Participants experience every step of the process while honing communication and cooperation skills. (Can also be taught in competitive “Iron Chef” style.)

Fresh and Green
A dozen ways to make a salad and vinaigrette from scratch. Includes a make-your-own salad bar with organic local greens and a large number of add-ins and dressing options.
A participatory lesson in how to make your own celery salt, lavender sugar, rosemary vinegar, and more! Includes locally-made wrapping paper and other gift-giving ideas.
An all-dessert demonstration and tasting session featuring seasonal fruits in pies, cakes, macarons, and trifles. Selections vary depending on season.
Death by Chocolate
A purely decadent demo—dark chocolate and fleur de sel hearts, chocolate raspberry mousse, and chocolate liqueur fondue. Accompanied by stories about the history of chocolate and its power as an aphrodisiac and health enhancer.
